This wine is ready to enjoy now, but it also has the potential to develop further complexity over the next 10 years in your cellar. Decanting is optional, but if you choose to do so, allow it to breathe for up to 30 minutes before serving.

Since the 19th century, the family-owned Louis Michel & Fils winery has been an integral part of the Chablis landscape, contributing to the distinctive steely character that the region is celebrated for. The challenging climate, with its frosty winters and scorching summers, demands a deep understanding of the land. Guillaume Michel, the current manager, draws on generations of knowledge to craft some of the finest terroir-driven white wines in Burgundy.

This wine hails from the Premier Cru vineyard of “Butteaux,” located in the western part of the Montmains valley. The grapes are harvested from four distinct parcels on the steep slopes, before making the short 2km journey to the winery, where the magic of winemaking unfolds.

This Premier Cru “Butteaux” exhibits a complex and captivating nose, with notes of baked apple, honey, and yeast, complemented by subtle hints of brushy undergrowth and minerality. On the palate, it’s a quintessential example of unoaked Chardonnay, with glossy flavors of citrus and green apple that envelop the mouth from the first sip. These are followed by hints of honey and a symphony of minerality—limestone, wet rock, and salt. The finish is long and persistent, driven by a refreshing acidity.
