Henri Champliau is a family-run winery in Burgundy, founded by Alexandre Graffard and named in honor of his grandfather. The winery focuses solely on producing sparkling wines using both the Champenoise and Charmat methods, sourcing grapes directly from select winegrowers.
This wine, crafted from Gamay grapes, is a tribute to Alexandre’s grandfather, Henri, and his passion for horse racing. The label specifically commemorates the victories of his horse, Wild Miss, in 1955. Fermentation takes place in specialized horizontal tanks to maximize contact with the lees, ensuring full development of the aromatic profile. Following the ancestral method, fermentation is then halted by lowering the temperature.
Wild Miss 55 Méthode Ancestrale Rosé presents a clear color with pink hues, brightened by a dense and fine mousse. The aromatic profile is rich, fresh, and intensely fruity, with notes of grapes, cherries, and raspberries. On the palate, the wine is lively with a pronounced acidity that beautifully balances the natural residual sugar from unfermented grape must. The finish is persistent, echoing the fruity notes. This is the perfect wine for a delightful summer aperitif, pairing well with spicy Asian cuisine or a red fruit tart.
