The Bichot family boasts a rich and extensive history in the Burgundy region, tracing its roots back to the 16th century. However, it wasn’t until 1912 that Albert Bichot commenced winemaking under the family name. Presently, the winery is helmed by another Albert Bichot, who oversees a vast viticultural domain encompassing six distinct estates.

Domaine Long-Depaquit represents the Chablis arm of this empire and stands as one of the most esteemed wineries within the appellation. The Les Vaillons Premier Cru greets the senses with a delightful array of orchard fruit, lemon zest, and white flower aromas. The Chardonnay grapes are cultivated on a bed of red clayish soil, which bestows remarkable concentration and richness upon the wine.

On the palate, Les Vaillons envelops the tongue with flavors of white peach, grapefruit rind, ripe pear, butter, honeysuckle, and a cleansing minerality. The majority of the grapes underwent aging in stainless steel tanks, while a small portion matured in oak, contributing subtle notes of toasted almond. Overall, it presents a full-bodied wine, characterized by good acidity and a zesty personality. The finish is enduring and profoundly gratifying.
