The Albert Bichot winery has been established in Beaune since 1912. Its history is intertwined with the Bichot family’s heritage, which dates back to 1350 in Burgundy. However, it was in the early 1900s that the company gained recognition in international markets, and in 1937, the Maison became the official supplier to the Swedish court. This legacy has been passed down through generations, and since 1966, Alberic Bichot (the sixth generation) has been at the helm.
Albert Bichot’s Chablis is crafted from Chardonnay grapes sourced from various parcels spread across a total area of 40 hectares. Here, the vines thrive in Kimmeridgian clay-limestone soils, which impart exceptional complexity and structure to this cuvée. Fermentation and refinement, lasting 10 months, occur in stainless steel vats on fine lees.
This Chablis displays a clear and crystalline pale yellow hue with subtle greenish tints. The wine’s bouquet reveals citrus and white flower aromas, complemented by mineral notes characteristic of Chablis. On the palate, it is vibrant and lean, exhibiting remarkable freshness and hints of almonds and minerals, culminating in a long and persistent finish. It is perfect as an aperitif, but its pronounced minerality makes it an excellent pairing with fish, seafood, and even sushi.
